Garlic spinach puffs

Puff pastry
1 egg
1 Tblsp milk
2 Tblsp butter
¼ cup Parmesan cheese
1 Tblsp minced garlic
1 medium onion minced
1 pkg chopped frozen spinach, thawed
1 cup chopped mushrooms
1 cup chopped red pepper
8 oz Havarti jalapeno cheese
Ground pepper
Heat oven to 375 degrees

Line cookie sheet with parchment paper.

In a medium frying pan, cook butter, onion,mushroom,

red peppers and garlic until garlic is tender. Approx.5 min.

Add spinach and continue cooking over medium heat until the red pepper is tender-crisp.

Add the cheeses, spinach, salt and pepper and mix oover low heat until cheese is melted and spinach well mixed.

Set aside.

Roll out pastry and cut into strips (whatever size you choose).

Place filling in center and press edges to seal.

Put on parchment lined cookie sheets.

Brush with egg/milk wash

Cut 2 or 3 slits in each (I use scissors)

Bake for 10 – 12 minutes.

Place on rack to cool

Serve warm or cool to freeze.

To serve from freezer: thaw and warm in 325 oven for

approx. 5 -7 minutes until warm throughout.

Try other cheeses, for example, feta.

This recipe can easily be doubled or more as required.
