Ginger with a Snap Lemon Chicken

Lemon chicken with a “kick”
RECIPE INGREDIENTS
1 1/2 lb chicken breast, skinned and fat removed
1/2 cup fresh lemon juice
1/2 cup Pepperlane's Ginger with a Snap preserves (www.pepperlane.com)
1/2 onion cut up
1 clover garlic minced
1/4 tsp turmeric
salt and black pepper
DIRECTIONS
Place chicken in 13X9X2 glass backing dish


In a medium bowl combine and mix lemon juice,Pepperlane's Ginger with a Snap preserves, onion, garlic, turmeric. Pour mixture over chicken and marinate in refrigerator several hours or overnight, turning occasionally.


Sprinkle with salt, and black pepper.


Cover and bake at 325 degrees for 30 minutes. Uncover and bake 30 minutes more or until done.
