Gingerbread Peach Cake

This is a great desert for any time and for any holiday meal. Use your imagination on plating to get the pat on the shoulder. ( you might want to make 2)
1/2 c. butter
1 c. sugar
1 egg, beaten
1 c. molasses
2 1/2 c. flour
1 1/2 tsp soda
1/2 tsp salt
1 tsp cinnamon
2 tsp. ginger
1 can sliced peaches with juice
Nutmeg Sauce:
1 c. sugar
1c. water
1 tbsp. cornstarch
2 tbsp. butter
1 tsp frehly grated nutmeg  Or (ground nutmeg)
Pre-heat oven to 350

With mixer combine first 3 ingredients and add flour slowly add soda, salt,cinnamon, ginger, and mix on low speed add peaches and juice and beat for 1 minute on medium speed or until peaches are blended into batter.

Coat cake pan with spray oil

bake at 350 degrees and let cool. Slice and cover with hot nutmeg sauce.


Combine the sugar and cornstarch and blend with the water. Cook in a double boiler over hot water, stirring until thickened. Remove from the heat and stir in the butter and nutmeg. Serve hot.
