This is fast, cheap and easy. You can serve it with breakfast, lunch or dinner as an entree or a side dish.
• 1-6oz. Pkg. Frozen hashed brown potatoes (thawed)
• 3  eggs - beaten
• 1/4 cup milk
• 1/8 lb. ham - chopped
• 1/2 cup shredded Monterey Jack cheese
• 1 green onion - chopped
• 1/8 cup chopped cilantro
• 1/4 cup picante sauce
• 1/8 tsp. salt
• Pepper to taste
Preheat oven to 350 degrees.

Grease a 10 inch pie plate.

Combine all ingredients and mix well.

Bake at 350 degrees for 50-60 minutes until the mixture is set and golden brown.

Remove, and then let it sit for 5 minutes. Then cut into 3-4 pieces.

We Ate the Whole Thing!
This was very easy to make and used up many leftovers. It was delicious. I topped it with about 1/4 cup more shredded jack cheese when it came out of the oven. My husband and I ate the whole thing, even though it was supposed to serve four. I will make it again using some different additions; bacon, mushrooms, etc.
