My dad didn't stray far from meat and potatoes and this casserole was as close as he would get to Italian cuisine. Its has a slightly sweet taste and I think that's what he liked about it. My mom cooked this dish for 45 years and it was always a hit.
1 lb ground beef
1 med onion, chopped
1 1/2 cups catsup
2 TBSP vinegar
2 TBSP brown sugar
1 TBSP yellow mustard
1 6oz can tomato paste
1 8oz can tomato sauce
1 lb cottage cheese
2-4 cups cooked shell macaroni (depends on how many you're feeding)
2-4 cups cheese (Velveeta, sharp, American, motzarella) grated or cubed
1/2 cup grated parmesian cheese
Brown beef and onions together.

Add, catsup, vinegar, brown sugar and mustard and cook 10-15 minutes to thicken slightly.

Add tomato paste and sauce and mix well.

In a large casserole dish layer sauce, shells, cottage cheese, grated cheese. Repeat ending with sauce. Top with parmesian cheese and bake at 350 degrees for 40 mins till bubbly. You can add extra cheese on top the last ten minutes if you like.

I would not call this recipe "Italian," but it was a great basis for making it so. I suggest adding 2 to 3 cloves of minced garlic to cook with the onion and beef, then add with the sauces Italian seasoning or any combination of herbs to your personal taste. As for cheese, don't use the non-food processed cheeses such as Velveeta or American. Use real cheese, preferably mozzarella, mild cheddar, or any Italian cheese. I also added Asiago cheese with the Parmesan. Now that's Italian!
