Gramma Marie’s Banana Bread

  Makes 1 loaf
Freezes well and recipe may be tripled as written.
1 cup sugar
1/4 cup cooking oil
1 egg
1 cup milk
2 very ripe bananas, mashed
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda mixed into flour
1/2 cup chopped walnuts
Heat oven to 325 degrees F.

Mix all ingredients in a large bowl until combined. Pour into a greased (may use cooking spray), large loaf pan. Bake for one hour or until top is brown. Remove from oven and cool on wire rack for 15 minutes. Remove from loaf pan and continue to cool.

I just made this banana bread, and let me tell you, it is wonderful. I did not have plain flour, so I used self rising, and left out the nuts. It tastes so good! The only thing I would add to it is just one more banana!
