Gramma's Potato Salad

This recipe is a favorite with my son and grandson. They usually tell guests that it is not very good (so they can save the leftovers for themselves)! It disappears quickly at my house.
2 lbs red potatoes
1/2 lb bacon, fried and crumbled
4 hard boiled eggs. cooled and sliced into bite size pieces
3 chopped celery stalks
1/2 cup mayonnaise
1/4 cup red wine vinegar
1/4 cup white wine
2 chopped scallions
2 tablespoons sugar
1 tablespoon dijon vinegar
salt and pepper to taste
Wash and boil potatoes until tender in lightly salted water, starting with cold water.

When done, transfer with slotted spoon to a plate or tray to cool. When still warm, but cool enough to handle, peel away skin (or leave skin on) and chop into bite size pieces.

Place in a mixing bowl and pour white wine over and gently toss.

Mix dressing of mayo, red wine vinegar, sugar, chopped celery, scallions, salt and pepper. Stir to blend, pour over warm potatoes and toss.

When ready to serve, add eggs and bacon bits, toss gently and top with chopped parsley or cilantro, and paprika.
