Straight from Western Russia, the original recipe, 100 years old.
16 oz container Sour Cream
1 cup flour
2 large eggs
dash of salt
1/8 to 1/4 cup mustard (depends on your taste buds)
stick of butter
Beat all ingredients with electric mixer, being careful to use a spatula to regularly scrape sides so all mixes thoroughly.

put a generous pat of butter where each pancake will go on a medium-hot griddle.

Pour a small amount on griddle and let it spread out to about 5-6". (4 to 5 at a time). When center turns from shiny to dull, flip over. Edges should be slightly brown. Serve plain from the pan. Great with a glass of milk.

If mixture is too thick, use small amount of milk as a thinner. Batter should drip thick and slow from beaters when they are raised.
