- For Salad:
- 2 grapefruits, peeled and segmented
- 1 1/2 cups shredded arugula
- 2 cups lightly packed watercress leaves
- 3 green onions, chopped
- For Dressing:
- 1/2 cup olive or safflower oil
- 2 tablespoons walnut oil
- 1/4 cup grapefruit juice
- 1 tablespoon grated ginger
- 2 tablespoons chopped fresh mint
FOR SALAD AND DRESSING: Toss the grapefruit, arugula, watercress and green onions in a large bowl. Combine remaining ingredients in a medium bowl. Season dressing to taste with salt and pepper.
TO SERVE: Toss the salad with enough dressing to coat and serve immediately.
