Grapefruit, Fennel and Anise Pound Cake

RECIPE INGREDIENTS
• 2 sticks butter
• 3 cup sugar
• 2 tsp. almond extract
• 6 eggs
• 3 cups all-purpose flour
• 1/4 tsp. baking soda
• 1/4 tsp. sea salt
• 8 oz. sour cream
• 1/2 tsp. anise seeds
• 1/2 tsp. ground cinnamon
• 1 tsp. fennel seeds
• 1 Tbsp. grapefruit zest
• 2 Tbsp. freshly squeezed grapefruit juice
DIRECTIONS
Preheat oven to 325 degrees F. Prepare a 10 inch loaf pan with non-stick baking spray.


In a large bowl, combine butter, sugar, and almond extract; mix well. Slowly add eggs; beat on medium speed until well combined. Slowly add flour, baking soda, sea salt, sour cream, anise seeds, cinnamon, fennel, grapefruit zest and grapefruit juice together; add to butter mixture; beat until combined.


Transfer mixture to prepared baking pan.


Bake for 1 hour 30 minutes or until golden brown or until cake tests done with toothpick.
