Greek 7 Layer Dip Flatbread

3 tablespoon olive oil, divided
1 large onion- small diced
1 lb Ground lamb
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon cinnamon
1 tablespoon red chili flakes
1 16 oz container prepared red pepper hummus
2 cups prepared Tzatziki (recipe below)
½ cup Kalamata olives – pitted and halved
2 large tomato – seeded and chopped
½ Red onion – small diced
4 oz Feta – crumbled
4 Flatbread
2 cups Daisy Sour Cream
½ cucumber – shredded (squeeze out liquid)
½ red onion – small dice
2 tablespoons olive oil
1 tablespoon red wine vinegar
2 tablespoons dill – finely minced
1 tablespoon mint – finely minced
1 lime, juice and zest
In sauté pan, add 1 tablespoon olive oil and onion. Season with salt and pepper. Cook on medium, stirring often until softened – about 8 minutes. Add lamb, cumin, coriander, cinnamon and chili flakes. Season again with salt and pepper. Cook on medium, stirring often to break up the meat until done – about 10 minutes.

To assemble – in sauté pan, add remaining olive oil. Lightly crisp flatbread on both sides. Transfer to a paper towel lined plate. Season with salt and pepper. On each flatbread, layer as follows – hummus, lamb mixture, tzatziki, olives, tomato, red onion and feta. Slice into wedges. Serve immediately
