Greek Chicken Salad

This is a wonderful main dish on a warm summer day or evening. Some crusty
RECIPE INGREDIENTS
1 English cucumber, cut into 1/2-inch cubes
1 pound yellow or red grape tomatoes, halved
1 medium red oniion, chopped
1 cup flat-leaf parsley, shopped
1 cup drained pitted kalamata olives (optional)
1/2 cup extra-virgin olive oil
1/2 cup lemon juice
1 tsp. dried oregano or basil
1/2 pound feta cheese
2 cups cooked chicken breast cubes
Salt and fresh-ground pepper
DIRECTIONS
1. In a large bowl, combine first five ingredients.


2. In a small bowl, mix olive oil, lemon juice and oregano/basil.


3. Break feta into small chunks and add to cucumber mixture along with chicken. Add dressing and mix gently,


adding salt and pepper to taste.


Note: For a vegetarian version omit chicken and substitute 2 cans garbanzo beans, rinsed and drained.
