Greek Turkey Burgers

Yield:  24 servings
RECIPE INGREDIENTS
1/2 Pound onions, finely diced
As needed olive oil
6 Pounds ground turkey
3/4 Cup pimento-stuffed olives, drained and finely chopped
1/3 Cup parsley, chopped
2 Tablespoons garlic, minced
1 1/2 Teaspoons ground cinnamon
3/4 Teaspoon freshly grated nutmeg
1 Tablespoon salt
1 1/2 Teaspoons freshly ground black pepper
1 1/2 Cups sour cream
1 1/2 Cups Feta cheese, crumbled
24 Each pita bread
1 1/2 Pounds cucumber, small dice

DIRECTIONS
Caramelize onions with oil. Cool and reserve.


Mix ground turkey, caramelized onions, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper together and form into 4-ounce patties.


Grill over direct heat or cook in 350 degree F oven to an internal temperature of 165 degrees F.


Combine sour cream and Feta cheese in food processor and pulse lightly to combine.


Place burger in folded pita and top with Feta mixture and cucumbers.
