My Armenian mother always made Green Beans & Eggs for our special meals including Thanksgiving. It is a family favorite. There are different variations but my family enjoys this one. Most think it is an odd combination but when they taste it, they lov
5 eggs
1  medium yellow onion minced
1 16 oz. bag frozen French style green beans (do not use canned French green beans)
3 Tbsp. butter
Green Beans & Eggs (Armenian) Recipe at
1. Beat the eggs by hand along with some salt & pepper until smooth.

2. Heat a 12-inch non-stick skillet on medium heat, add the butter to melt.

3. Add the minced onion to the skillet and sauté the onion until soft. Do not brown.

3. Meanwhile cook the French style green beans in a 2 qt. sauce pan in a small amount of salted water until just done. Do not overcook.

4. Strain the green beans so they are no longer wet.

4. Add the strained green beans to the skillet and distribute evenly.

5. Add the beaten eggs over the green beans and cook on a medium heat until the eggs are done on one side, then flip to finish cooking the eggs. Try not to scorch.

6. Serve immediately.

Also, good as leftovers.
