Grill Potatoes

I came up with this recipe years ago when my family would go camping. I also call it camping potatoes. The kids are grown, we don't camp anymore, so they are now "grill" potatoes. My family loves them, and I have a family of fussy eaters.
RECIPE INGREDIENTS
6 medium russet potatoes
1 small sweet onion
3/4 cup shredded cheddar cheese
4 Tbsp. margarine
Salt and pepper to taste
DIRECTIONS
Wash potatoes


Thinly slice potatoes with skins intact (approximately 1/8 inch)


Thinly slice onion


Spray a large sheet of heavy duty foil with cooking spray


Layer potatoes and onions on half of sheet


Salt and pepper as desired


Add shredded cheese to top


Dot with margarine


Fold the other half of foil sheet over potatoes


Tightly crimp edges and fold over twice


Place on grill and cook for a half hour


Gently turn over and cook for an additional 15 minutes


Remove from grill


Carefully cut foil package open and serve


Potato slices should be brown and crisp outside and tender inside
