Grilled Mustard Chicken Breast Salad

A second method of cooking chicken that keeps the meat tender and juicy is to grill the chicken 2 to 3 minutes on each side, making diamond shape grill marks and transfer to a preheated oven for 5 to 7 minutes to finish the cooking process.
RECIPE INGREDIENTS
8 ounces skinless boneless chicken breast (two 4-ounce breasts)
1 tablespoon dijon mustard
1/8 teaspoon kosher salt, optional
1/8 teaspoon fresh ground black pepper, optional
2 ounces mixed greens, 2 cups, washed and patted dry
1/2 cup cherry tomatoes, washed and patted dry

DIRECTIONS
Preheat a charcoal, gas, or stove-top grill.

Brush the chicken breasts with dijon mustard and season with salt and pepper. Place the chicken on the grill for 3 to 5 minutes on each side, making diamond shape grill marks. Move the chicken breasts to the edge of grill, where the temperature is less intense, and cook until the juices run clear and the chicken is done. Remove and set aside to cool.


Evenly distribute the washed mixed greens on to two chilled salad plate. Slice the cooled, grilled chicken breasts on the bias and fan over the mixed green. Drizzle dressing over the salad and garnish with cherry tomatoes.
