Grilled Corn Salad

This salad just sings of summer at its best using fresh, seasonal ingredients.
RECIPE INGREDIENTS
5 ears corn on the cob
1/2 small red onion, chopped
1 basket cherry tomatoes, halved
1/4 cup basil, julienned
3 Tbs balsamic vinegar
5 Tbs extra virgin olive oil
DIRECTIONS
Grill or broil corn in one layer of husk for 8-10 minutes. When cool enough to handle, strip corn from the cob into a large bowl.


Gently mix the corn, onion, tomatoes and basil. Add the vinegar, olive oil and salt and pepper to taste.


Let sit at least 30 minutes and serve at room temperature.
