Grilled Corn Summer Salad

A light summer salad that is great to serve at any BBQ or cookout! The veggies (excluding corn) included can be altered to fit your family's tastes. I have also made it including shredded carrots, and topped with tortilla strips.
6 ears of fresh corn (in husks)
2 tsp. sea salt
1/4 cup melted butter
1 cup cooked white rice
2 cups cherry tomatoes, halved
1 green bell pepper, chopped
1 cucumber, peeled and finely sliced
1/4 cup sharp cheddar cheese
2 Tbsp. olive oil
2 Tbsp. balsamic vinegar
1 lime
1. Carefully peel back corn husks and remove silk. Rinse corn. Pull husks back up around corn. Soak for 1 hour in large pot. Drain.

2. Carefully pull husks back again. Brush with melted butter and sprinkle with sea salt.

Pull husks back up around corn and secure with kitchen string.

3. Place corn on grill over medium heat for 25 minutes. Turn often.

4. Remove corn from grill. Let cool for a few minutes. Pull back husks and cut corn off the cob in large sliced pieces.

5. Combine cooked rice, tomatoes, bell pepper, cucumber. Top with corn. Sprinkle with cheese.

6. Drizzle with vinegar, olive oil, and the juice of one lime.

7. Season to taste with sea salt and fresh ground pepper.
