Grilled Zahtar Bread with Tomatoes

Zahtar is a Middle Eastern spice mixture that includes summer savory, thyme, sesame seeds and a pinch of ground sumac.
RECIPE INGREDIENTS
4 large slices coarse peasant bread
Extra-virgin olive oil
4 teaspoons zahtar (see Note)
Crushed red pepper
Diced beefsteak tomatoes
DIRECTIONS
Light a grill.


Generously brush the bread with olive oil and sprinkle each slice with 1 teaspoon of the zahtar.


Season with salt, black pepper and crushed red pepper.


Grill the bread over a medium-hot fire, turning once, until nicely browned and crisp, 1 to 2 minutes per side.


Top with diced tomatoes and serve.


WINE RECOMMENDATION:


These savory toasts need nothing more complicated than a glass of crisp white wine. Select a Washington State Chardonnay, such as the 1997 Hogue.
