Grilled Zuchini with Feta

This is a great summer time appetizer or side dish. So fast and easy and good for you too.
RECIPE INGREDIENTS
Two large zuchini's (about eight inches long)
Olive Oil
Basil Pesto
Sundried tomatos
Crumbled feta cheese
DIRECTIONS
Slice zuchini long ways, into planks about 1/8-1/4 inch thick.


Rub both sides with olive oil.


Put on grill on high heat and reduce heat to medium, cooking for about 3-4 minutes.


Flip them and spread the cooked side with basil pesto to tast. Don't go too overboard on the pesto. approximately 1 tsp. each plank.


Add sundried tomatos to your tast, more or less depending on preference.


Sprinkle on crumbled feta and close the lid.


Grill about 3 more minutes or until zuchini is tender and cheese is slightly melted.
