Legend has it that the first person to eat an avocado was a Mayan princess, around 290 B.C. The ancient Aztecs believed that avocados had mystical and romantic powers. The following recipe is a classic guacamole recipe from Chef Josephina Howard.

  • 1 small onion, chopped
  • 1/2 teaspoon salt
  • 1/2 jalapeno pepper or more, to taste, seeded, ribs removed, and minced
  • 2 ripe Haas avocados, peeled and pits removed, cut into bite-sized pieces
  • 1 medium tomato, chopped
  • Taco chips, for serving

In a small mixing bowl, combine the onion and salt. Add the jalapeno, avocados, and tomato. Stir to combine.

Serve with tortilla chips.
