Ham and Potato Soup

Tastes great, easy to make!
3 1/2 cups diced potatos (peeled or unpeeled)
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced cooked ham
3 1/4 cups water
2 tablespoons chicken boullion granules
1/2 tsp salt or to taste
1 tsp ground pepper or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk

Saltine crackers
Fried croutons
Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until the potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.

In a spearate saucepan, melt the butter over medium-low heat. Whisk in the flour, stirring constantly until thick, about a minute. SLOWLY stir in the milk to prevent lumps until all the milk has been added. Contine stirring over med-low heat until thick, about 10 minutes.

Stir in the milk mixture and cook soup until heated through. Serve immediately.

Top with bacon bits or fried croutons, or crunch up Saltine crackers and add to the soup.
