Ham, Cheese n’ Spinach Breakfast Burrito

ingredients

  • Cooking spray
  • 1 cup diced onion
  • 6 ounces diced extra-lean turkey or ham
  • 2 cups baby spinach
  • 2/3 cup corn kernels
  • 10 cherry tomatoes, halved
  • 1 cup liquid egg substitute or 2 beaten whole eggs
  • 1/2 cup grated low-fat sharp cheddar cheese
  • 4 Mission Life Balance Medium/Soft Taco Whole Wheat Tortillas

Heat the griddle.

Coat a nonstick skillet with cooking spray and heat over medium heat. Add the onion and saute until transparent, turning frequently. Add the ham, spinach, corn and tomatoes. Continue to stir until the spinach is wilted, approximately 5 minutes. Add the eggs and cheese, stirring until the eggs are firm. Remove from heat. Set aside.

Heat the tortillas on a griddle preheated to medium-high until hot. Fill each with one-quarter of the egg mixture, roll into a burrito and serve. Makes 4 burritos.
