Ham-Mandarine Orange Rollups

These pretty and delicious rollups can be prepared ahead of time and are perfect for brunch, lunch, or cut in half and served as appetizers. The easy-to-find ingredients are inexpensive, yet make up an elegant and delicious dish, which is also good cold.
RECIPE INGREDIENTS
1 - 11 oz. can mandarine oranges (drain and reserve juice)
1 1/4 cups cooked white rice (cooked with reserved mandarine juice to partially replace the water)
1/3 cup orange or peach yogurt
1/4 cup finely chopped almonds, pine nuts or walnuts
1/4 cup finely chopped fresh parsley
2 finely chopped green onions (green and white parts)
8 slices cooked ham
1/3 cup orange marmalade
1 1/2 tbsp freshly squeezed lemon juice
DIRECTIONS
Reserve 8 orange pieces and finely chop the remainder. Mix together well the chopped oranges, rice, yogurt, nuts, parsley and green onions. Divide evenly among ham slices and roll up jelly-roll fashion, fastening with tooth pickes. Place into 9x9 lightly greased baking pan.


Combine marmalade and lemon juice. Pour over ham rollups.


Bake, uncovered, at 350 for 25 minutes. Spoon the marmalade sauce in the pan over the rollups occasionally during cooking. Use reserved 8 orange pieces for garnish. These are very pretty and tasty, and serve 2 rollups to each person.
