Happy as a Clam with Pasta Soup

Use small pasta of your choice, some examples are; Ditalina, Alphabet, Fregula. Good served with oyster crackers or french bread.
1 Tbs olive oil
1 large onion minced
2 garlic cloves crushed
One 14 oz can crushed or petite diced tomatoes
1 Tbsp sun dried tomato paste
1 Teas sugar
1 Teas Italian Seasoning
3 cups fish or vegetable stock
2/3 cup red wine
½ cup small pasta shapes
5 oz can of clams in natural juice
2 Tbsp chopped flat leaf parsley
Salt and pepper to taste
Heat oil in a large saucepan, add onion and cook 5 minutes until soft.

Add garlic, tomatoes, tomato paste, sugar, seasoning, stock, wine and salt and pepper and bring to a boil. Lower heat, partially cover the pan and simmer for 10 minutes stirring occasionally.

Add pasta and continue simmering uncovered for about 10 minutes until the pasta is al dente, stirring occasionally.

Add clams and their juice and heat through 3-4 minutes, add more stock if necessary. Do not allow to boil. Remove from heat, stir in parsley and serve.
