Best selling cookie at my dad's bakery. Macaroon recipe that didn't puff but sold great as is so dad never tried to change it
1 cup granulated sugar
1 1/2 cups brown sugar
1 cup shortening (crisco)
1 1/3 cups flour
1 teaspoon baking soda
pinch of salt
3/4 cup coconut (grated)
1 1/4 cup oatmeal
2 eggs
1 teaspoon vanilla

Put all ingredients in large bowl and mix well. Divide into two parts and roll dough into two long rolls. Cut into 3 inch pieces. Place on ungreased cookie sheet, flatten slightly and bake at 350 degrees for 10-12 minutes. Remove when lightly brown on edges

WOW! What a cookie. And such a surprise too. I doubled the coconut and added 1/2 cup more oats. The cookie spread out on the pan. Fortunately, I used parchment paper and they peeled right off when they cooled. My guest lined up for these yummies.
