This is a great recipes for picnics and buffets because it is low fat and contains no mayonnaise. It holds up very well outdoors. You can change the ingredients to make this savory instead of sweet. Any ingredients you like will work well.
RECIPE INGREDIENTS
1 bag Trader Joes Harvest Grain Medley cooked according   to package directions.
2 diced carrots
2 ribs diced celery
1/2 English cucumber seeded and diced
4 green onions, finely sliced and including green portions
3/4 cup dried cranberries or cherries
3/4 cup toasted slivered almonds
1 bunch chopped cilantro or mint
Salt and pepper to taste
DRESSING
3/4-1C seasoned rice wine vinegar
1/8-1/4C olive oil
1 tsp sugar
1/4 C Trader Joes Champagne, Pear and Gorgonzola low fat dressing.
DIRECTIONS
Cook Grain Medley according to package directions


Mix with vegetables and fruit


Mix dressing(adjust amounts to taste) and pour over grains and vegetables. Let sit in the refrigerator to absorb all the flavors.

This was a hit!
The entire family loved this salad! It was christmas morning, all we had was the grains and not all of the ingredients, and everybody loved it anyhow. I put some sriracha in, a teaspoon, be careful with that stuff, you can ruin it and it won't be hot mixed up in an oily mix, but once you put it in, it's hotter than you tasted. So, a little at a time, but it definetly added to it. Definetly toast your almonds yourself, slivered or whole, do it!
