Healthful Caesar Salad

The most popular salad in the United States is Caesar salad. It's traditionally made with romaine lettuce, olive oil, lemon juice, Parmesan, garlic, anchovies and raw eggs. Now you could easily think that these ingredients are quite safe, but that might not be true. Those uncooked eggs in the Caesar salad could be as dangerous as Brutus was to Julius. I've modified all my recipes that previously used raw eggs. Here's my Healthful Caesar Salad.


  • 2 hard-boiled egg whites, finely chopped
  • 2 anchovy fillets, chopped
  • 2 tablespoons prepared mustard
  • 2 cloves garlic, chopped
  • Juice of 1/2 lemon
  • 1 tablespoon red wine vinegar
  • 1/4 cup vegetable oil
  • 1 large head of leaf lettuce, washed, dried and chopped into bite-sized pieces
  • 1 cup garlic croutons (see recipe above)
  • 3 tablespoons grated Parmesan
  • 3 drops Tabasco sauce
  • 5 drops Worcestershire sauce

In a salad bowl, blend together the hard-boiled egg whites, anchovies, mustard, garlic and lemon juice to make a paste.

Add the vinegar and slowly blend in the vegetable oil.

Add the remaining ingredients and toss to coat thoroughly.
