Healthy chicken veggies

Here is a healthy, flavourful way of preparing chicken breast!
RECIPE INGREDIENTS
All chopped veggies below (except coriander, onion and garlic) are coarsely chopped, so that each piece of chicken breast is as big as two pieces of vegetable (approx.)
two diced chicken breasts
two finely chopped cloves of garlic
one chopped zuchini
5 chopped asparagus
5 chopped button mushrooms
1/4 cup finely chopped coriander
5 medium chopped green onions (scallions)
salt, pepper, and spice to season
2 tbsp lemon juice (optional)
DIRECTIONS
-combine all ingredients and mix well.


-allow to marinate for several hours or overnight (in the fridge)


-preheat oven to 400F (205C)


-place the mixture in a shallow baking dish, cover with aluminium foil


-place in oven and allow to bake for 15 minutes or until chicken is well-done


-serve and enjoy


(be careful not to crush the soft zuchini)


serve with a healthy green salad (baby spinach, snow peas, celery, brocolli)
