Healthy Turkey Vegetable and Rice Soup

2 turkey legs
1 sm. onion
1 bay leaf
1 Tbsp. salt
3 carots
3 celery stalks
2 lg.chicken bouillon cubes
1 can diced tomatoes
1/2 cup barley
1/2 cup whole grain brown rice
1 Tbsp. sugar
Put in dutch oven: 2 turkey legs

enough water to cover legs

(approx. 3 qts.)

1 sm. chopped onion

1 bay leaf

1 Tbsp. salt

Bring above to a boil, reduce heat and simmer one hour.

Add: 3 diced carrots

3 diced celery stalks

2 lg. chicken bouillon cubes

1 sm. can diced tomatoes w/half their juice

Cook till turkey is done (approx. 15-20 mins.)

Take turkey legs out to cool down a little. While turkey is cooling, add: 1/2 cup barley

1/2 cup whole grain brown rice

1 Tbsp. sugar

Cook 15 mins.. Add diced turkey and heat about 10 mins.
