Hearty Chicken Sausage Soup

3 – Chicken breasts (1½ - 2 Lbs.)
14 oz. Sausage
1 tablespoon of minced Garlic
1 yellow Onion
3 – 4 New Potatoes
3- 14oz can Chicken broth
2- 14oz can diced Tomatoes
16oz frozen Corn
14 oz can Chick peas, drained & rinsed
14oz. can Butter bean
1 – 2 Zucchini
1 – 2 Squash
1/4 tsp. Black pepper
1 tsp Oregano
½ tsp Thyme
1 tsp Basel
2 - 3 Bay leafs
?– ¼ Cayenne to taste (optional)
Cut the Chicken into bite size pieces and slice the sausage into pieces.

Coat the bottom of a large heavy pot with EVOO, add the minced Garlic, cook until light drown

Add the Chicken and cook thoroughly.

Add the pre-cooked Sausage.

Dice Onion and add to pot, cook until translucent

Dice new Potatoes

Add Chicken broth

Add Potatoes, Corn, Chick peas, Butter beans, Tomatoes, black Pepper, Oregano, Thyme, Bay leafs, Basel, [Cayenne, optional].

Bring to boil and reduce to simmer, cook until potatoes are tinder

Add Zucchini, Squash

Simmer for about 30 minutes.

Ladle into soup bowls and serve with a piece of cornbread and butter.
