Heavenly Almond Torte

This recipe has been passed down through four generations now and it is always a major hit. My husband 'assumes' he will enjoy this on his birthday. His Grandmother and then his Mother baked this. I now bake it for both my husband and children.
1/2 cup shortening
1/2 cup granulated sugar
1/8 tsp. salt
4 egg yolks, beaten frothy
1/2 tsp. vanilla extract
3/4 tsp. almond extract
1 tsp. fine orange zest
3 TB. whole milk or half&half
1 cup sifted cake flour
1 tsp. baking powder
4 egg white
3/4 cup granulated sugar
1/2 cup sliced blanched almonds
1&1/2 TB. cinnamon sugar {can make mixing 1 TB. sugar with
1/2 tsp. cinnamon}
Custard for Filling:
1/3 cup granulated sugar
3 TB. corn starch
1/4 tsp salt
2 egg yolks
2 TB butter
2 cups scalded whole milk or half&half
1 tsp. vanilla extract
1/4 tsp. almond extract
Cream shortening with electric beaters in large bowl.

Beat in 1/2 cup sugar and salt until light and fluffy.

Then beat in the 4 egg yolks, vanilla, almond extract, orange zest and milk.

Sift cake flour with baking powder and add to mixture; blending well.

Spread mixture into two round, greased 8' cake pans.

Now beat egg whites until very light and gradually add the 3/4 cup of sugar.

Bring to stiff peaks.

Spread gently on the unbaked cake mixture in both pans.

Top both with the almonds.

Sprinkle the 1&1/2 TB cinnamon sugar over both .

Bake in preheated oven at 350 for 25 - 30 minutes.

Let cool on baking racks away from drafts.

Meanwhile ... the custard!!!

Combine the 1/3 cup granulated sugar with the salt, corn starch, egg yolks and butter.

Cream together.

Gradually add scalded milk {tempering} beating constantly

Cook in double boiler until thick - this takes around 8 minutes.

Allow to cool, stirring every few minutes.

Add the vanilla extract & almond extract.

Now place one layer of cake on serving platter.

Gently swirl 75% of the custard filling on top of this layer.

Place second layer on top of filling.

Gently swirl remaining custard in center of torte.

Can garnish with a bit of shaved bittersweet chocolate or a few fresh raspberries.
