Herbed Whole-Wheat Couscous

Quick and versatile, serve this couscous alongside any saucy dish.


  • 3/4 cup reduced-sodium chicken broth
  • 2 scallions, sliced
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup whole-wheat couscous


Bring the broth, scallions and parsley to a boil in a small saucepan. Add the couscous, return to a simmer, cover and remove from the heat. Let stand, covered, 5 minutes. Fluff with a fork before serving.
