High-Fiber Orange-Bran Muffins

Makes 12 muffins


  • Butter for a muffin tin
  • 1 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 cups All-Bran cereal
  • 3/4 cup skim milk
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 2 egg whites
  • 1/2 cup chopped dates or raisins
  • 2 teaspoons grated orange peel


Preheat the oven to 400 degrees F.

Stir together the flours, baking powder and soda and set aside.

In a large bowl, mix together the cereal, milk and orange juice. Let stand 3 minutes. Add the honey, egg whites, dates or raisins and orange peel and beat well.

Add the dry ingredients to the cereal mixture, stirring only until combined. Portion the batter evenly into 12 greased or paper-lined muffin tins with 2 1/2-inch diameter cups.

Bake for about 20 minutes or until golden brown.
