A flavorful twist on the traditional.
RECIPE INGREDIENTS
DRY Ingredients
1 Cup Hungry Jack extra light & fluffy pancake mix (or your favorite brand)
1 Teaspoon Sugar
½ Teaspoon Vietnamese Fancy Cinnamon (a sweeter, milder flavor) - NOTE: some folks may want to
adjust this down to ¼ Teaspoon if they are using a stronger cinnamon.
WET Ingredients
1 Egg, large
½ Cup Milk
½ Teaspoon Almond Extract
¼ Cup Bailey’s Irish Cream
2 Tablespoons Butter, melted
Crisco or shortening
DIRECTIONS
Mix all dry ingredients in mixing bowl. Mix all wet ingredients together in separate mixing bowl. Melt butter in microwave-proof dish. The butter is very hot, so be careful! Add butter to wet ingredients and mix well. Add dry ingredients to wet ingredients, using whisk to lightly mix. Be careful not to over-stir the batter.


Cook pancakes in a heavy skillet on medium heat. Use just enough Crisco or shortening to lightly coat the surface of the skillet.


Serve with your favorite syrup or try something new, like Blueberry syrup.


MAKES 8-10 pancakes; SERVES 2-3


*This same mixture can be used for waffles!
