Holiday Stuiffing

Besides stuffing for a turkey, this is also a delicious accompaniment to roast
RECIPE INGREDIENTS
6 ozs dried Michigan tart cherries (or cranberries are good too!)
1 cup Madeira wine (cheap is OK)
16 slices of day-old firm white bread (homemade-style) – toasted
1½ cups toasted coarsely chopped pecans
1 ½ cup chopped onion
1 ½ cup chopped celery
½ cup chopped shallots
(Or 1 medium onion, chopped and 1 large minced garlic clove)
1 stick butter
2 tart apples, coarsely chopped
½ cup golden raisins
½ cup chopped fresh parsley
2 teaspoons dried tarragon, crumbled
6 dried sage leaves, crumbled or (2 teaspoons of precrumbled)
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon ground pepper
DIRECTIONS
The preparation time is 1 hour after the cherries have been soaked overnight; the baking time is 50 minutes if in a baking dish.


THE NIGHT BEFORE:


PLACE DRIED CHERRIES (AND RAISINS IF YOU WANT) IN A BOWL WITH MADEIRA AND SOAK FOR SEVERAL HOURS OR OVERNIGHT.


THE DAY OF. . .


PREP WORK:


1 - TOAST BREAD IN OVEN – PLACE ON RACK – BAKE – 300º UNTIL


BROWN – BE VERY CAREFUL NOT TO BURN!


2 - TOAST PECANS IN TOASTER OVEN – DON’T BURN!


3 - MELT BUTTER IN SKILLET.


4 - CHOP ONION,CELERY,SHALLOTS - PUT IN SKILLET & SAUTE


UNTIL VEGETABLES ARE SOFTENED.


5 - CHOP APPLES AND PARSLEY – PUT IN BOWL


WHEN READY TO ASSEMBLE STUFFING:


TEAR THE TOASTED BREAD INTO SMALL PIECES AND PLACE


IN A LARGE MIXING BOWL.


ADD THE TOASTED PECANS.


DRAIN THE CHERRIES AND RAISINS, RESERVING MADEIRA, AND ADD THEM TO THE BREAD MIXTURE.


ADD SAUTED VEGETABLES TO THE BREAD BOWL.


ADD APPLES, (RAISINS), PARSLEY, TARRAGON, THYME,


SAGE, SALT, PEPPER, AND THE RESERVED MADEIRA.


TOSS THE STUFFING WELL.


Place this stuffing in a greased baking dish and bake alongside the bird at 325º for 45-50 minutes. Moisten the stuffing with turkey broth or canned chicken broth as needed; otherwise, all the moisture comes from the butter and Madeira.


You may reduce butter content by half and make up the moisture with broth.
