Hollywood Salad

My revival of a popular restaurant salad during the 1980's using bagged young salad greens and simple fresh ingredients with wonderful sweet,tart flavors and various delightful textures. Perfect for a light lunch for 2 or an elegant salad course for 4.
RECIPE INGREDIENTS
-for salad:
5 oz. bag mixed young salad greens
8 strawberries,stemmed,quartered
4 ripe kiwi,peeled,sliced
1 medium red onion,sliced into rings
4 oz. whole walnuts,lightly toasted
2 oz. dried cherries or cranberries
-for dressing:
1 pint ripe raspberries
4 tablespoons balsamic vinegar
juice of 1 lime
2 tablespoons honey
1/2 teaspoon Kosher salt
1/4 teaspoon fresh ground black pepper
1/2  cup light olive oil
DIRECTIONS
On a large platter or 4 salad plates,arrange greens,sliced strawberries,kiwi,red onion,toasted walnuts and dried cherries or cranberries in a decorative manner.


Put raspberries,balsamic vinegar,honey,lime juice,salt and pepper in a blender and puree until smooth. Slowly drizzle in olive oil with blender running to form an emulsion.


Pour dressing equally over salad. Serve immediately.


Yield:2-4 servings
