Homemade Moon Pies

Don’t be looking for a perfect looking cookie, not with this recipe anyway. When we make these monstrosities, everyone agreed that while they might be unsightly, they cover all the basic cookie requirements. Chocolate, marshmallows and graham crackers.
RECIPE INGREDIENTS
1/2 c Butter
1/2 c vegetable shortening
2 c brown sugar
1/2 c honey
1 tbsp vanilla
1/2 c sugar
2 c all purpose flour
4 c graham flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 cup milk
2 jars Marshmallow creme
16 oz milk chocolate
16 oz dark chocolate
DIRECTIONS
Line 2 cookie sheets with parchment paper, cut to size.


sift together the flours, baking soda, baking powder and salt. Set aside.


In a large bowl, combine the butter, shortening, brown sugar, honey and vanilla. Mix over medium speed until well combined. Add 1/4 of the flour mixture and 1/3 of the milk, mix well. continue combining with the remaining milk and flour mixture. mix well.


Take a 1/4 of the dough, and place on a lightly floured surface. Roll out to about 1/4 inch thickness. cut to the shape you want with a cookie cutter. Place the cookies on the parchment lined cookie sheets. Continue with remaining dough.


Preheat the oven to 375*


Place the cookie Sheets in the oven and bake for 8-10 minutes until lightly browned.


Cool completely on a wire rack.


To assemble:


Melt the chocolate over low heat - add a small amount of butter to thin the chocolate if necessary.


Place 1 cookie on a prep board. place a generous amount of marshmallow fluff in the center of the cookie. Top with another cookie and press to force the marshmallow creme to the edges. Using tongs, roll the edges of the cookie in the chocolate, then dip the tops and bottoms in the chocolate. Place on a parchment lined baking sheet, place in the refrigerator to set. repeat with remaining cookies.


*Hint- if you have kids doing this- see if you can convince them to do the assembly at their friends house. It’s a big freaking mess- but everyone loves chocolate and marshmallows soooooooooo..........

recipes that never end but no reviews ???
i 've gone through all these cookie recipes and there is not ONE REVIEW ....do you just make this junk up & hope it comes out okay ?? who bakes this stuff with NO REVIEWS ??
