Even though it is called Hot Sausage Soup, it is not spicy hot
2 lbs. bulk hot sausage
2 bunches green onions, chopped
1 large can crushed tomatoes
1/2 cup fresh basil, chopped
1 cup fresh parsley, chopped
2 green peppers, chopped
2 zucchini, diced
1 large can beef broth
1 1/2 cups red wine
Italian pasta, your choice
Parmesan cheese, grated
Romano cheese, grated
Form sausage into small balls and brown in a 3-4 qt. Dutch oven. Drain off grease. Add onions, tomatoes, peppers and basil. Stir together. Add broth, parsley and zucchini. Stir. Add wine, simmer for 30 minutes. Serve with cooked pasta and sprinkle with grated Parmesan and Romano cheeses.
