Huevos Rancheros w/ Fried Tortilla

Unlike some other variations, this recipe cooks the tortilla in the pan with your eggs. It is quick and easy, but can be easily expanded to include more depth and complexity depending on the time available.
-1 egg
-1 6'-8' corn tortilla (you can always cut down a big one to fit your pan)
-1/8 cup shredded cheddar cheese (or any mexican mix which uses mostly cheddar)
-1/4 cup salsa
-1/4 cup sour cream
Heat your tortilla in a non-stick pan with a little oil (optional) over medium high. When it has browned a little, flip it over. Carefully crack an egg on top (it should roughly cover the tortilla), and sprinkle a handful of cheddar cheese over the whites. When the egg is about half-way set, flip it over (again, trying not to break the yolk). Cook another two minutes or until the egg is the way you like and the cheese is crispy. Flip it back over onto a plate, and decorate to taste with your toppings.

Tips for this approach to HR:

-After breaking the egg, tilt the pan around to spread the whites out to the edge of the tortilla, finish with the yolk in the center. This will help your tortilla cook more evenly.

-The cheese is fried instead of just melting, therefore it is important to use cheddar (or a similar cheese) which will brown nicely in the pan.

-It is easy to add complexity and depth to this dish! Try adding diced garlic or chicken on the egg with your cheese before flipping, make fresh pico and guac, or a side of spicy black beans!
