Makes 7 servings


  • 1 1/4 cups yellow or white cornmeal
  • 1/2 cup finely chopped onion
  • 1/4 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 3/4 cup evaporated milk
  • 1 large egg, lightly beaten
  • 1 tablespoon lemon juice
  • Vegetable oil


Combine the cornmeal, onion, flour, salt, baking soda, black pepper and cayenne pepper in a medium bowl. Combine the evaporated milk, egg and lemon juice in a small bowl; add to the cornmeal mixture. Mix just until blended.

Add the vegetable oil to 2 inch depth in an electric skillet or large skillet; heat to 350 degrees F.

Drop the batter by rounded tablespoon into the hot oil; turn to brown evenly. Cook, turning frequently, for about 3 minutes or until golden brown. Remove with slotted spoon; drain. Serve immediately.


Add 1 cup (4 ounces) shredded sharp cheddar cheese to the batter; mix well.
