  • 1/2 gallon vanilla ice cream
  • 1 package (10 ounces) flaked coconut
  • Fresh mint, optional

directions

Scoop ice cream into 12 balls. Place on a baking sheet and freeze until solid. Roll in coconut. Garnish with mint if desired.
