Indian Style Rice and Cabbage

1 Head Cabbage(cut into strips or bite size pieces)
1 lbs Carrots (cut into soup size pieces)
1/2 Onion (chopped)
3-5 cloves Garlic (minced)
Dash of Hot Sauce
Dash of Curry Powder
Pinch of Dry Parsley
1 Bay Leaf
Vegetable Stock (enough to cover/finish with water)
Salt and Pepper
Jasmine Rice
1/4 Onion
Curry Powder
Dried Parsley
Roasted Garlic
Many traditional Indian dishes are vegetarian. You can incorporate meat into the dish but I find that keeping it vegetarian really makes it stand out. I add a fried egg to the final dish to incorporate more protein.

Saute Onions in olive oil

Add Garlic cook for 1 minutes

Add Carrots, Cabbage and Stock

Bring to Boil

Cover with water, Add Bay Leaf

Simmer for 10 minutes

Add Parsley and Curry Powder

Simmer 10-15 minutes until cabbage and carrots are soft

In another pot, prepare rice according to package instructions

In rice water, add chopped onion and curry powder before adding rice.

Add and cook rice.

Add Roasted Garlic and Parsley.

Add fresh lemon juice or drop a slice of lemon in rice for a few minutes to add a zing.

Serve cabbage soup over the rice.

I like to add a soft fried egg on top of the soup as a protein and additional layer of texture and flavor.
