One 20 oz package Simply Potatoes Shredded Hash Browns
2 c Simply Potatoes Traditional Mashed Potatoes
1/2 c all purpose flour
2 eggs
1/8 c olive oil
1/2 teaspoon onion powder
1/2 c buttermilk
salt and pepper to taste
olive oil for frying
kosher salt to finish
Put hash browns in a large bowl. Sprinkle the flour, onion powder, salt and pepper over the potatoes and gently mix. Add 2 c mashed potatoes, and gently fold. Add in the two eggs, fold again; add the olive oil, fold in; the buttermilk, fold in.

Heat frying pan or griddle, put olive oil in, does not have to be deep, but make sure it it hot before you drop the batter in. Pan should be medium-hot setting. Cook till brown and crisp, flip and cook the other side. Put on paper toweled plate to drain, sprinkle with kosher salt.

How to prepare?
sorry, a question, not a review. Does anyone know if this is cooked in a single mass or dropped like potato pancakes? the volume seems too much for a single cake.
