Irish Cheddar Soda Bread

This is the perfect bread to serve on St. Patrick's Day! The secret to the tenderness of this soda bread is Simply Potatoes Mashed Potatoes.
RECIPE INGREDIENTS
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup grated Irish cheddar cheese
1 cup Simply Potatoes Traditional Mashed Potatoes
1 cup buttermilk
Butter, for greasing the pan
DIRECTIONS
Preheat oven to 400 degrees. Butter a 9x5-inch loaf pan. In a mixing bowl, combine the flour, baking soda, and salt. Mix well. Add the cheddar cheese, mashed potatoes, and buttermilk. Mix until a soft dough is formed. Form into a loaf and place inside the loaf pan. Bake for 1 hour, until golden brown. Allow to cool before slicing.
