Irish hash brown and bangers casserole

Luck of the Irish for compliments for this yummy meal! Full of flavor from the Emerald Isle Irish comfort food for sure!
RECIPE INGREDIENTS
1 pound Irish Banger sausages out of casings
1 bottle Guinness beer
4 slices thick cut bacon cut in ½ inch pieces
3 medium shallots finely chopped
1 clove garlic minced
2 20 oz. bags Simply Potatoes Shredded hash browns
4 tablespoon butter
2 tablespoons flour
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 teaspoon fresh grated nutmeg
2 ½ cup shredded Kerry Gold aged cheddar
DIRECTIONS
Start by pulling casings off bangers and crumble into small mixing bowl then add ½ of the bottle of Guinness cover and place in refrigerator for 15 minutes. While they are marinating cut up bacon and place in large frying pan and cook on medium high for 4-6 minutes until crispy . Remove from pan into large bowl.


Chop shallots and garlic add to frying pan and begin to sauté on med high heat add crumbled bangers and sauté 5-6 minutes or until done. Place bangers, shallots and garlic in bowl with bacon add shredded hash browns mix well.


In same frying pan on medium heat add butter when melted add flour Wisk to blend well cook for2-3 minutes to cook the flour. Add the rest of the Guinness stir well and turn on low heat simmer for 2 minutes then add 1 ½ cup shredded Kerry Gold cheddar stir until completely melted. Add fresh nutmeg, salt, ground black pepper and pour over the hash brown mixture stir well then place in a medium size casserole dish or 8-10 large ramekins.


Top with the rest of cheese and bake in preheated 350 degree oven for 30-35 minutes. It comes out golden brown and yummy!
