Irish Potato, Cabbage, Ham Scallion Cocannon

This is a simplified version of an old Irish favorite dish, especially on St. Patrick's Day! Enjoy anytime. It's a terrific comfort food.
RECIPE INGREDIENTS
4-1lb. packages of SIMPLY POTATOES COUNTRY MASHED POTATOES
1 lb. boiled ham
water
1 head of cabbage (savoy preferably), cored and shredded
1 cup water
1 cup milk
1 stick of butter
1 cup scallions, finely chopped
1/2 cup of chives, finely chopped
salt and pepper to taste
DIRECTIONS
1. Boil cooked ham in water for about 1/2 hour, drain and chopped into small pieces and set aside.


2. In a large saucepan, melt 1/4 stick of butter and add the SIMPLY POTATOES and heat until hot, mash and set aside.


3. Boil the shredded cabbage in about 1 cup of water until tender about 12-15 minutes, drain and add to the mashed potatoes.


4. In a separate heavy saucepan add milk, 1/2 stick of butter, scallions and boil, stirring constantly.


5. Pour this into the potato-cabbage mixture.


6. Add salt and pepper to taste and mix well.


7. Pour the mixture into a large bowl,poke holes on top and pour 1/4 stick of melted butter into the holes, garnish with chives.
