Island White Rice with Lime

  Makes 4 servings
1 3/4 cups water
1 cup white rice
1/2 teaspoon salt
1 tablespoon butter
2 tablespoons fresh lime juice
1 whole clove garlic, peeled
2 teaspoons finely grated lime zest
1 tablespoon chopped fresh chives (optional)
In a saucepan, bring the water to a boil. Add the rice, salt, butter, lime juice, and garlic. Cover the pan and lower the heat. Simmer for 18 to 20 minutes, until all the liquid is absorbed. Remove the clove of garlic.

Place the rice in a serving bowl. Stir in the lime zest and chives, if desired.
