Island White Rice with Lime

Makes 4 servings
- 1 3/4 cups water
- 1 cup white rice
- 1/2 teaspoon salt
- 1 tablespoon butter
- 2 tablespoons fresh lime juice
- 1 whole clove garlic, peeled
- 2 teaspoons finely grated lime zest
- 1 tablespoon chopped fresh chives (optional)
In a saucepan, bring the water to a boil. Add the rice, salt, butter, lime juice and garlic. Cover the pan and lower the heat. Simmer for 18-20 minutes, until all the liquid is absorbed. Remove the clove of garlic.
Place the rice in a serving bowl. Stir in the lime zest and chives, if desired.
