I got a similar recipe out of a Boston newspaper Sunday paper, but it only used rosemary. So, adapted it using the oil, garlic and Italian spices and it was delicious. So I share this recipe when I can. It is so good.
Oven 350 degrees
1 whole 7-9 lb roasting chicken
8 potatoes, peeled & thin sliced
1C of milk
Garlic powder
Italian Spices
Vegetable or olive oil
Get a 9x12 glass baking dish, and rub margarine all around the inside. Then peel & thin slice the potatoes and cook them on the stove in water and the milk until almost cooked. Drain, then layer potatoes in the dish, sprinkling garlic powder and Italian spices on each layer, to taste. Then take the chicken, clean it & remove giblets and place on top of the potatoes, season with oil, garlic powder and Italian spices. Put it in the oven and bake until the chicken is completely cooked. Remove the chicken from the potatoes when it is done and put the potatoes back in the oven to brown. When done, serve. And enjoy!
