Italian Relish dip

This is a recipe that I have been eating since I was a kid. it was one of the dips my mother would make when she would throw a dinner party. Best served with a quality cracker.
1-Med Jar of Green Olive (with pimento)
1-Med Jar of Black Olives (no pitts)
1-Sm Jar of Roasted Red Peppers
2-Med Jars of Marinated Artichokes
1-Large Egg plant
1-Med/Large Yellow Onion
1/4 Tsp White Pepper
1/8 Tsp Garlic Powder
Cut the skin off an Egg Plant and cut into 1/4" round disc's. Spray a large cookie sheet and Bake at 350 until very soft.

While thats baking, Grab a large mixing Bowl and chop each ingredient into small minced pieces. I like to leave them chunky my wife likes it smaller so it will fit better on a cracker.

The ratio for this is some what up to you but equal amounts of each is not a bad mix. I like less Black Olive in mine. or not as much Onion. there is not a set amount of each.

Once the Egg Plant is done add that (chopped) to the mix.

Season with a little White Pepper and Garlic powder to taste. cover the mixing bowl and chill just to meld the tastes. I rinse and refill all the jars used for this dip with the finished product. it will last in the frig for weeks Enjoy!
